Global safeness on the quality of Food:
Safeness at the production of complaint-free foodstuffs is a basic pre-requisite, for both the manufacturers and those who bring the food into circulation, in order to meeting the statutory requirements and the requirements of the market. The requirement on comparable food safety standards is also increasing in fact of the advance of globalisation in the food market
Securing the quality levels is not limited to the production of foodstuffs alone. The same demands have to be met by all the companies and suppliers that are involved into the value chain. These are the manufacturers of additives, of packaging materials and of packaging as well as the manufacturers of machines (that are used for the manufacturing of food) as well as all service providers that are involved to the food chain (logistics and transportation companies, cleaning agencies, pest control firms, air-conditioning firms and water supply, cold storage, ….). Even the controlling authorities have to be included at the approach of the global food safety concept. That is the only way in which transparency can be assured from the producer up to the consumer
The main responsibility for food safety rests on the operational self-monitoring of each company. Principles have to be defined within the company for the implementation, this principles are reflected as part of the Quality Management System.
Food Safety Standards:
The term "food safety" means much more than food articles without hygiene related flaws. Safe consumption is ensured also by the absence of genetic technology, the absence of allergens and by the labelling that provides comprehensive information. In addition there are the market requirements on information about the BIO, ÖKO or source related production, whose labelling have to be monitored and controlled by the authorities.
The food industry and the trade develop standards for food safety with the aim of enhancing the consumers' trust in the products and to procure legal security as manufacturer or distributor. The standards or quality seals should lead to greater transparency along the food supply chain.
